Fresh Curry Beef

A tasty beef dish that will warm your family all the way to their toes. Best served on a bed or side of long grain rice.
What you will Need for the Dinner Portion of the evening     

2 sirloin steaks (Alternate meats
are lamb and pork.)

1 green/red Bell Pepper

1 onion

3 cloves of garlic (depending on taste preference)

1/2 tsp dried thyme

1-2 table spoons of curry powder (depending on taste
preference)

1 can tomatoes

2 oz of currents or raisons

Cooked long grain rice 

 

What to do with all this stuff now      

Before you start cutting and chopping, turn the oven on to 350 degrees with the rack in the center.

Cut your green/red pepper or both (if your intention is
color) into slices.  

Dice onion and garlic

Measure out dry ingredients.  You will want to have all of
them ready but not mixed, before you cut up the beef/chicken. Cutting the beef is the last step.  

Cut into chunks for presentation or sliced and diced for a stir fry. 

Mix the diced vegetables, canned tomatoes and dried goods.
Stir and add beef pieces and then bake until chicken pieces are cooked through. Remember altitude factors
in the length of time it takes to cook.  Watch that you don’t over-cook as the
vegetables are not that tasty if over-cooked.

Bake for 40 minutes or until beef  is done to desired tenderness.

Serve with long grain rice. Spoon out over top or add beside your rice portion. Garnish with greens.
